Key Responsibilities
Break down whole carcasses into standard retail cuts, trim, slice and prepare meat for customer display
Create and prepare smallgoods (cured meats, etc.) if required
Prepare and package products with proper portioning, garnishes, sauces, and labelling
Regulate and maintain cooking and curing equipment temperatures as needed (if facility includes those processes)
Store meat and smallgoods in temperature-controlled facilities to ensure safety and quality
Work to special dietary and customer requests (e.g. trimming for fat, packaging for dietary restrictions)
Maintain high standards of cleanliness in preparation areas, cutting tools, and display fronts
Perform stock takes, liaise with suppliers, and ensure fresh deliveries
Train junior butchery staff or assist apprentices under supervision
Skills, Experience & Qualifications
Minimum two years of relevant work experiences , OR a Level 4 qualification or above
Strong knowledge of food safety, hygiene and workplace safety standards
Good customer service skills, ability to communicate with team and customers
Ability to handle sharp tools and equipment safely
Physically fit for work involving standing, lifting, and repetitive cutting tasks
