We are currently seeking experienced Chefs who will join our busy restaurants in the Auckland Region.
The role of Chef at Hammer Head New Zealand Limited (trading as Daruma Sushi) will manage the following three branches :
- Daruma Sushi Botany
- Daruma Sushi Albany
- Daruma Sushi Sylvia Park
Key Duties
Prepare dishes according to traditional Japanese methods and flavours.Responsible for the complete preparation of any dishes on our menu.Responsible for the stock inventory, ordering of food supplies, estimation of food cost, and cost-cutting.Planning and developing menus, preparing weekly specials, and discussing pricing with the manager.Responsible for maintenance and development of quality of dishes.Maintain portion and quality control.Training and advising new kitchen staff on cooking procedures.Oversee the kitchen operations and supervise kitchen staff.Ensure good food quality control and enforcing the hygiene regulations.Managing and planning sales with the restaurant manager.Key Requirements
